Method
Gently melt the white chocolate (either over a bowl of boiling water or in the microwave) adding a knob of butter (the butter stops the chocolate turning horrible and stringy when you melt in). Once the chocolate has melted and is smooth take off the heat, stir in a good glug of double cream and add malibu to taste (as an alternative, add a good quality white chocolate liqueur). Place in a heat proof dish on the BBQ (or use a fondue set if indoors) and serve with a selection of chunks of fresh fruit (pineapple, coconut and banana are great if you use malibu, if opting for chocolate liqueur go for strawberries and raspberries) or, if you aren't feeling healthy, its lovely with mini donuts or shortbread.
