Method
Preheat the oven to 200C and fill a 12 - bun muffin tray with the large variety of paper cases. Measure into a mixing bowl the flour, baking powder, bicarbonate of soda, cocoa, sugar and chocolate chips. In another bowl put in the egg and whisk. Add the milk, oil and vanilla extract. Pour the egg mixture into the flour mixture and stir until it's a runny batter. Spoon into the waiting muffin cases and sprinkle with white chocolate chunks or chips. Bake for 20 - 25 minutes.
Makes 12 big muffins. To finish dust some icing sugar over the top of each muffin for effect.
