Method
Pre-heat your oven to 200C, 400F, gas mark 6. Either finely grate the chocolate or pulse in a food blender until small pieces/crumbs. Sift the flour, baking powder, sugar and cocoa powder together and add the grated chocolate. In a large bowl whisk the eggs, milk, oil and vanilla together. Add the dry ingredients, a tablespoonful at a time and mix in - you don't have to fold in but if using a spoon don't mix too hard. A metal egg whisk is ideal as it will help retain air in the mixture without you having to be extra careful! Lastly stir in the chocolate chips, leaving enough to place about 3 on the top of each muffin. Line a 12 pan baking tray with muffin cases and spoon in the mixture so that each case is just under half full (a tablespoon in each is about right). Cut the fudge into pieces about 1cm square and place 1 in the middle of each case. Spoon the rest of the mixture over until each case is about 3/4 full. Sprinkle the remaining chocolate chips on the top of each muffin. Place in the middle of the oven and cook for 18-20 minutes until the tops of the muffins are firm.
Place on a rack to cool. Great cold but better hot with cream or vanilla ice-cream as the fudge centre will be nice and gooey.
Will make 12 large muffins.
