Method
Preheat oven to 200C/400f/gas mark 6, Put 12 paper cases in muffin tin, Sift together the flour, salt, baking powder and sugar. Set to one side. In a separate bowl mix together the egg, milk, yogurt, melted butter and orange rind. Pour the wet ingredients into the flour mixture and stir lightly until just combined. Add the chocolate chunks and stir them in gently. The mixture will be quite lumply, but there shouldn't be any flour visable. Spoon the mixture into the cases and bake for 20 minutes approx or until the tops spring back when you touch them. Cool on a rack.
Makes 12 muffins. A tip is not to over mix when you combine the wet and dry ingredients.
