Method
Separate the eggs & put whites in very clean bowl and the yolks in another. Break chocolate into small pieces and slowly melt in a bowl over a simmering pot of water with the butter. Add pinch of salt to egg whites and whip until slightly firm. When chocolate and butter have melted, leave to cool for a few minutes and add the softly beaten yolks. Slowly add the whites to the whole mixture. Pour into glasses or ramekins and leave to set in the fridge for a few hours.
Add a few dark or white chocolate curls to the top of each dessert. I like to put a few raspberries on the side or put a blob of cream on the top and add a raspberry or strawberry.
