Method
Place the chocolate and water in a pan and heat gently until melted. Cool. Whisk the eggs, egg yolks, sugar and orange rind in a bowl over a pan of boiling water, until thick and mousse like. Soak the gelatine in the orange juice, adding water if necessary to make 3 tablespoons. Place in a bowl over a pan of simmering water and stir until dissolved, then add to the mousse along with the chocolate. Stir over a bowl of iced water until thickening, then fold in half the whipped cream and place into 6-8 serving bowls. Decorate each chocolate and orange mousse with the remaining cream and grated chocolate.
