How to make Raspberry and White Chocolate Tray Bake:

Method
Pre-heat the oven to gas mark 4. Roll out pastry to line a 20*30cm tin. Blind bake for about 10 mins with baking beans, remove baking beans and place back in the oven for 5 mins until golden brown. Whisk the mascapone, sugar, eggs and almonds together. Fold in the raspberries and chocolate mix into the pastry casebake for about 20-25 mins until golden brown. Turn off the oven and open the door to allow to cool slowly.
