How to make Hot Chocolate Tortes:

good quality chocolate (at least 70% cocoa) |

Method
1. Heat oven to 160C fan bake and butter four ramekins (about 7.5 cm in diameter).
2. Slowly melt chocolate and butter in a small bowl over a pan of hot water, or if you are impatient, heat in a heat-proof bowl for 10 second bursts in the microwave. Leave to cool.
3. Using an electric whisk, whisk the eggs, egg yolks and sugar together until pale and thick, (almost white in colour) then add the chocolate mixture. Whisk until combined.
4. Sift the flour over the mixture and gently fold in, using a large metal spoon. Divide mixture between ramekins and bake for 12 minutes.
5. Turn out tortes onto plates and serve immediately (or eat straight out of the ramekins). Enjoy!
The liquid chocolate centre and crusty outer layer in this dessert is to die for!
