How to make Chocolate Truffle Pudding:

dry sponge cake crumbled |
| 75g |
walnuts chopped |
| 100g |
glace cherries chopped |

whipping cream whipped |

glace cherries, walnut halves |

Method
Break chocolate into pieces and melt over pan of hot water. Remove from heat. Soften cheese in mixing bowl, beat in sugar and rum until light and creamy. Stir in chocolate, cake crumbs, nuts and cherries. Chill for 30 minutes then roll into sausage shape (like a swiss roll) and then chill for a further 1 hour. Decorate with cream, nuts and cherries.
For 6-8 people.
