How to make Chocolate Souffles:

Method
1. Grease 8 individual souffle or ramekin dishes. 2. Melt the chocolate in a heatproof bowl over a saucepan of simmering water. 3. Once the chocolate is melted stir in the cream until smooth. 4. Whisk the egg whites and cream of tartar until stiff then whisk in 2 tbsp of icing sugar. 5. Fold the egg whites into the chocolate mixture and pour into the dishes, cover them with cling film and chill until required. 6. 1 hour before they are needed remove from the refrigerator and bring to room temperature. 7. Place in oven at 220 degrees c (gas mark 7) for 10-15 mins until well risen and set. Once cooked dust with the remaining icing sugar and serve with single cream.
