How to make Chocolate & Nectarine Steamed Pudding:

ripe nectarines peeled and cut into cubes |
For the Sauce |

continental plain choc. cut into pieces |

pouring double cream |

Method
You will need a 1.2 litre pudding basin.
Cut a square of foil to fit in the base of the basin
and grease well. Sieve the cocoa powder into a large
mixing bowl. Add the boiling water and whisk together
to make a thick paste. Add remaining pudding ingredients
except nectarines and whisk together til smooth.
Stir in the pieces of nectarine. Pour mixture into
buttered basin, and cover basin mixture with another
piece of foil buttered. Seal so that the steam can
not escape.
Transfer the basin into a large deep
saucepan, fill with enough water to come half way
up pudding basin. Bring to boil, cover and simmer
on a low heat for about 2 hours or until the pudding
is firm.
Remove from pan and turn onto a serving
plate. While the pudding is cooking make the sauce,
slowly melt choc and cream in a bowl over hot water
stirring until runny and smooth. Pour over the pudding
and serve.
