How to make Chocolate Fondant:

Method
Makes about 12.
1. Brush baking cups with melted butter very lightly then coat in cocoa powder and leave to one side.
2. Melt chocolate and butter together above simmering water (ban-marie).
3. Whilst chocolate/butter is melting whisk the eggs, egg yolks and sugar in a bowl.
4. Once chocolate has melted remove from heat.
5. Add egg/sugar mixture to chocolate/butter mixture and whisk until thickened (aprox. 30 secs)
6. Fold flour in. Then pour into prepared moulds.
7. Allow to cool then set in fridge for 1-2 hours. Bake at 165*c for 12-14 mins.
Place bowl or surving dish upside down on mould then flip it over. If you try and just put it onto a plate, the dessert may collapse best served topped with a cornell of cornish clotted cream.
