How to make After Eight and Raspberry Chocolate Trifle:

freshly made double chocolate chip muffins |
| 1/2 pack |
after eights |
| 250g |
fresh raspberries |
| 3 tablespoons |
of your favourite liqueur - eg tia maria |
| 8 pots |
chocolate mousse/ angel delight/or home made as required |

Method
Cut the muffins into slices and lay on the bottom of the trifle bowl. Dribble over the liquer. Chop the after eights into squares throw the after eights and raspberries over the sponge base and cover with the chocolate mousse (can make yourself if time allows) if you want you can put a layer of whipped cream over the mousse. Scatter with a few raspberries or chopped after eights or chocolate shavings. Refrigerate. This should be made 24hrs in advance and left in the fridge so the flavours goo together.
Make a big trifle as it always goes down very well. As it only takes 1/2 hr to make at the most its a great chocolate lovers pudding.
