How to make White Chocolate and Raspberry Cheesecake:

digestive biscuits - crushed |
| 4oz |
butter |
| 1 |
cup sugar |
| 1/2 tsp |
vanilla essence |
| 250g tub |
philadelphia |
| 1/2 pt |
fresh cream |
| to taste |
Frozen or fresh raspberries |
| to taste |
White chocolate drops (or brown if preferred) |

Method
Melt butter and add crushed biscuits. Press into base of cheesecake tin. Whisk philadephia and sugar together with vanilla. Add fresh cream and whisk until thick consistency, stir in raspberries and white chocolate drops. Add this mixture to top of biscuit mix. Leave to chill for 2 hours. Serve and enjoy!!!
