How to make Happy Hippo Cheesecake:

happy hippo bars - 1 box slightly crushed, 1 box whole |

Method
Melt butter in pan, add crushed digestive biscuits and mix, then place in a well greased pan. Flatten down to desired shape. Place in fridge to set. In separate bowl pour the double cream and whisk until soft peaks form. Add the icing sugar and soft cheese and mix for 3-5 mins. Take biscuit base out of fridge and pour the cheese mix on top, add the box of crushed hippos, spread evenly. Place back in fridge to chill then after around 20 mins, add the other hippos in an orderly fashion with a dusting of icing sugar.
Great for kids birthday parties, dinner parties etc.
