How to make Chocolate Marbled Cheesecake:

| 175g (6oz) |
plain choc digestive biscuits |
| 75g (2.5oz) |
butter |

half-fat creme fraiche or low fat soft cheese |

large eggs separated |
| 1tspn |
vanilla essence |
| 75g (2.5oz) |
plain choc melted |

raspberries and mint sprigs to decorate |

Method
1. Pre heat oven to 170c Line base of 20c
spring form tin with non stick baking paper. Mix crushed
biscuits with butter Press over base and side of tinChill
2. for the filling beat creme fraiche or cheese with sugar. Beat in egg yplks and vanilla. Whisk egg whites until soft peaks form, then fold into mixture. Put a third into a separate bowl, Stir in melted chocolate.
3. Spread half the remaining vanilla mixture over the base. Spread over half the chocolate mixture. Top with remaining vanilla mixture then remaining chocolate mixture.
4. Swirl through the mixxtures with a knife. Put
tin on a baking sheet. Bake 1 hour or until filling
is just firm and a skewer inserted into the centre
comes out clean. Turn off oven.
5 Leave cake to cool 15 - 20 mins in oven. Transfer to a wire rack and allow to cool. Remove from tin.
Decorate with raspberries and mint.
