Method
Melt the butter in a heavy based pan and add the crushed ginger biscuits, until the crumbs are coated in the butter. Once this is done place this mixture in a bottomless cake tin. Next split the cream cheese, double cream and the grand marnier and orange peel into three separate bowls. Melt each type of chocolate separately and add one type of chocolate to an individual cheese mixture and fold in. Layer one of the three mixes on top of the biscuit mix and allow to set in the refrigerator, once set add the second mix and allow that to set then add the final layer.
Dust with icing sugar and a few raspberries and also melt a little extra of each chocolate and swirl over the top of the finished cheesecake. Serve with whipped cream with a little of the grand marnier added into it.
