How to make Soft Centred Chocolate Cakes:

Ingredients |
| 250g (9oz) |
cooking chocolate (minimum 53% cocoa solids) |
| 175g (6oz) |
butter |
| 125g (4.5oz) |
icing sugar |
| 75g (2.5oz) |
flour |
| 5 |
eggs |
Method
1 - Preheat the oven to 200°C.
2 - Melt the butter and chocolate (either in a saucepan over a low heat, or using a microwave)
3 - Sift the flour and icing sugar into a bowl, add the eggs and combine well.
4 - Add the melted chocolate and mix.
5 - Butter and flour 6 ramekins.
6 - Add the cake mixture, 3/4 filling the ramekins.
7 - Cook for 7 minutes.
8 - Serve immediatley with your choice of vanilla ice cream, cream or mandarin coulis.
This is a light cake with a hot, liquid centre. N.B - The cooking time is crucial to this dessert: The centre of the cake should be hot and liquid.
