How to make Peppermint
Cream Slices (makes about 20 slices):

Margarine |
| 115g (4oz) |
Cooking milk chocolate |
| 1 tbsp |
Sugar |
| 1 tbsp |
Golden Syrup |
| 225g (1/2 lb) |
Crushed Digestive biscuits |
Quantity for icing |
Ingredients |
| 340g (12oz) |
Icing sugar |
| 1 tsp |
Peppermint essence |
| 115g (4oz) |
Cooking milk chocolate |
| 115g (4oz) |
Cooking dark chocolate |

Method for the base
Melt the margarine, cooking chocolate, sugar
and syrup and add the crushed digestive biscuits,
then mix thoroughly. Spread into a swiss roll tin
and allow to cool.
Method for the icing
Sieve the icing sugar and
add the peppermint essence. Gradually add small amounts
of warm water until a thick consistency is achieved.
Spread over base. When the icing has set, melt the
milk and dark cooking chocolate and pour evenly over
the top. Return to fridge to cool.
