How to make Chocolate Orange Mousse Sponge:

good plain chocolate |
| zest of 3 & juice of 2 |

eggs separated |

strips of orange skin to decorate |
Method
1.Preheat the oven to 180c. Grease a cake tin. Cream together the margarine and sugar. A little at a time add the eggs, beating after each addition. Sift together the flour, cocoa and baking powder. Add half of this to the margarine mixture. Fold in the other half afterwards. Spoon the mixture into the cake tin and bake for 20 mins. 2.Meanwhile, melt the chocolate. Stir after cooling and mix in the orange juice and zest. Now whip in the egg yolks. 3. Whisk the egg whites in a bowl until stiff peaks are formed. Fold this into the melted chocolate mixture. Spoon this onto the cooled sponge and even with a spatula. Put it in the fridge to set. Slice into large helpings and serve with the strips of orange skin.
