Apricot and Chocolate Squares

How to make Apricot and Chocolate Squares:

Quantity for the Cake

Ingredients
225g (8oz) plain flour
1tsp baking powder
100g (3.5oz) caster sugar
85g (3oz) soft brown sugar
225g (8oz) unsalted butter
150g (5.5oz) rolled oats
225g (8oz) apricot jam
100g (3.5oz) milk chocolate chips
25g (1oz) flaked almonds


Method
Preheat oven to 190 degrees C/375 degrees F/gas mark 5. Line a 30x20cm 12x8inch rectangular deep baking tray. Sift the flour and baking powder into a large bowl. Add the caster sugar and brown sugar to the flour and mix well, add the butter and rub, then add the oats. Put half of the mixture into the tray and bake for 10 mins. Spread the jam over the cooked mixture then add choc chips. Mix in the remaining mixture and add the almonds, then bake for a further 20-25 mins until golden brown and leave to cool, cut into squares.

You could add melted chocolate on top for extra taste.
