Method
Brownies: Preheat oven to gas mark 3. Melt butter and chocolate in a bowl over hot water. Stir in cocoa powder and sugar. Beat in mascarpone, eggs and vanilla until smooth. Fold in flour, bicarbonate and salt. Pour into prepared tin and bake for 40 to 45 mins or until knife or skewer comes out clean. Leave to cool.
Mint Layer: In a bowl beat all ingredients until smooth. Add a drop of green food colouring if you want frosting green. Spread frosting over brownie and place in fridge until firm.
Chocolate Glaze: Melt butter and chocolate in a bowl over simmering water. Spread over mint filling and place in fridge to set. Cut brownies into squares and watch them disappear!
