Method
Heat oven to 180c/gas 4. Grease and line 7" x 11" deep baking tin. Melt chocolate and butter together in a basin over hot water - remove from heat and allow to cool slightly. Stir in almonds, vanilla essence, sugar and beaten egg yolks then dried fruit. Whisk egg whites until stiff then carefully fold into mixture. Spread into lined tin and bake for 35 - 45 mins - should be risen, firm and slightly cracked. Allow to cool in tin then cut into squares.
This is really good if you can resist eating it for 24 hours- but is so tempting warm!
