How to make triple choc chilli cookies:

Dark choc in chunks |
| 85g (3oz) |
Unsalted butter |
| 175g (7oz) |
Soft brown butter |

Eggs |
| 1 tsp |
Vanilla essence |
| 350g (14oz) |
Dark choc chips |
| 55g (2oz) |
White choc in chunks |
| Half tsp |
Dried chilli flakes |

Method
1) Preheat oven 180c, sift the first four dry ingredients into bowl. Set chunks of dark choc on a plate over a pan of simmering water to melt.
2) Cream the butter and sugar and beat the eggs. Stir in melted choc followed by the choc chips and white choc chunks.
3) Fold in the mixed dry ingredients and chilli flakes until all combined. Drop heaped tbsps of mix onto non stick baking tray. Bake for about 10 mins. Allow to cool before putting on a wire rack.
