Refrigerator Cookies

How to make refrigerator cookies:

Quantity

Ingredients
150g (5oz) Butter, softened
150g (5oz) Caster sugar
1/2 (optional) Orange rind, grated (add more
if needed)
1 Egg, beaten
225g (8oz) Plain flour
100g (3.5oz) Chocolate chips


Method
Lightly grease two baking trays. Measure the butter, sugar, lemon rind, egg and flour into a bowl and mix together until smooth dough is formed. Lightly knead, then wrap in a greaseproof paper and chill in the refrigerator for about 30 minutes. Roll the dough into a sausage shape abouit 2 in (5cm) in diameter and 8 in (20cm) long. Wrap in greaseproof paper and chill again for about 30 minutes or until firm enough to slice. Pre-heat the oven to 190 C/375 F/GAS 5. Unwrap the dough, then cut into 1/4 in (5mm) slices. Place on the prepared baking trays and bake in the pre-heated oven for about 12-15 minutes or until golden. Lift off and cool on a wire rack.
