How to make Ganache Sandwich Biscuits:

Method
Whisk butter with icing sugar and then add vanilla essence, cornflour and salt. Gradually add flour until a soft dough forms. Put in cling film and chill for about 2 hours. Roll on icing sugar until thin. Cut out any shape you like. Should make about 20 biscuits. Put in oven 200 degrees celsius for 15-20 mins until golden then cool. Melt chocolate individually in microwave with 2 tsp water for 30 seconds, slowly add cream until a smooth paste. Put a spoonful of chocolate on each biscuit then add biscuit to the top to make a sandwich.
Add sieved icing sugar or cocoa to top of biscuits. Can also use jam as filling.
