How to make Apricot & White Chocolate Cookies:

| 250g |
self-raising flour |
| 75g |
whole rolled oats |
| 175g |
sugar |
| pinch of |
salt |
| 125g |
butter |
| 2 x 15ml spoons of |
golden syrup |
| 2-3 x 15ml spoons of |
milk |
| handful of |
broken white chocolate chunks |
| handful of |
chopped dried apricots |

Method
1) Pre heat oven to 190C (gas 5). 2) In a bowl mix together the flour, oats & salt. 3) Rub in the butter until the mixture looks like breadcrumbs. 4) Stir in the syrup, sugar & enough milk to form stiff dough, knead well, adding the dried fruit & chocolate. 5) Place small spoons of the mixture on a lightly greased baking tray & flatten gently using the back of a fork. 6) Bake in the oven for 15-20 minutes until lightly golden. 7) Cool on a baking rack until crisp.
