How to make Super Energy Choc Seed and Fruit and Oat-jack:

butter or spread of your choice (healthier the better) |

demerara sugar |

honey |

good quality porridge oats |
| 300g |
mixed seeds (e.g. pumpkin, sunflower, omega 3 seed mix) |

chopped mixed nuts |
| 100g |
ground almonds |
| 200g |
mixed fruit (e.g. raisins, currants, cranberries) (Super indulgent, soak the fruit in some rum or brandy!) |
| 250g |
good quality dark chocolate |

Method
1. Heat the butter/spread, sugar and honey until the sugar has dissolved. 2. Combine dry ingredients in a large bowl, add the dissolved items in 1 above and mix well. 3. Line a couple of biscuit trays with baking parchment lightly oiled with almond oil. Spread the above mix onto trays to 1.5 cm thick. 4. Bake in a preheated oven 180 degrees (160 degrees fan assisted) for around 30 mins until golden brown. 5. Meanwhile melt the chocolate in a bowl over some boiling water. 6. Allow the tin to cool for a few minutes and then mark the Oat-jack into required sizes with a knife without cutting through. Drizzle the melted chocolate over the Oat-Jacks in a crisscross pattern. 7. Allow to cool some more and if desperate, freeze for 20 mins, then enjoy!
Sometimes after taking the cooked Oat-Jack out of the oven firming the mix with a spatula keeps the Oat-Jack from crumbling.
